Abstract:
This study aimed to investigate 1) the basic recipe for butter cookies, 2) the appropriate amount of Seablite (Suaeda maritima) Powder in butter cookies products and 3) consumer acceptance of butter cookie products supplemented with Seablite (Suaeda maritima) Powder. The sensory evaluation results for the basic butter cookie recipe revealed that the panelists gave the highest liking scores for appearance, color, aroma, taste, texture and overall preference with average scores of 8.32, 8.24, 8.08, 8.12, 8.08 and 8.12 respectively. The study on four levels of Seablite (Suaeda maritima) Powder added to the total wheat flour weight (0%, 10%, 15% and 20%) found that panelists accepted butter cookies containing 15% of Seablite (Suaeda maritima) Powder. The crispiness value differed significantly (p ≤ 0.05). The analysis of physical and chemical properties of the basic recipe of butter cookies products and butter cookies supplemented with Seablite (Suaeda maritima) Powder indicated no significant differences in color values (L*, a*, b*) (p > 0.05). However, crispiness showed a statistically significant difference (p≤0.05). The butter cookie products supplemented with 100 grams of Seablite (Suaeda maritima) Powder contained 4.97 grams of protein, 57.05 grams of carbohydrates, 31.26 grams of fat, 4.82 grams of moisture, 1.90 grams of ash, 973.23 micrograms of beta-carotene, 2.46 grams of dietary fiber and 710.513 micrograms of calcium. Consumer acceptance of the product was 80.67%. The cookies are beneficial to health and are packaged in a plastic box containing 7 pieces (70 grams) priced at 50 baht. They should be distributed in bakeries.
