Abstract:
The purpose of this study was to determine the influence of pretreatment on the
physicochemical and pasting properties of MONJAOPRAO (Dioscorea alata L.) flour (JP).
Flour samples were prepared by randomly allocating JP slices to two treatments: distilled water
(JPC) and 0.1% sodium metabisulfite solution (JPS) from stored tuber at room temperature for
3 months. JPC and JPS flour had varied chemical compositions and physicochemical qualities
in each month of storage (p<0.05). JPC flour had greater protein and fat content than JPS flour
after each month of storage (p<0.05). The amounts of ash and crude fiber in JPC and JPS flour
were not different (p>0.05). Furthermore, it was found that JPC and JPS flour did not have
different levels of phenolic compounds (0.71-1.18 mgGAE/g.) in each month of storage. JPC
flour had a lesser DPPH antioxidant effect than JPS flour from the 0th to the 2nd month.
However, the FRAP value of JPC flour was higher than JPS flour only after the first month of
storage, and no other FRAP values were found. The swelling power value, water solubility
index, water absorption capacity, oil absorption capacity, emulsion activity and emulsion
stability of JPC and JPS flour did not alter between months of storage (p>0.05). For pasting
properties, peak viscosity and breakdown of JPS flour were significantly higher than JPC flour
(p<0.05). Nevertheless, no difference in minimum viscosity, setback, final viscosity, and
pasting temperature
