Abstract:
The purposes of the descriptive research were to 1) study knowledge, attitudes, and dietary behaviors of low-starch diets and intermittent fasting, and 2) compare knowledge, attitudes, and dietary behaviors of high school students with overnutrition. The sample consisted of 134 high school students with overnutrition in Wang Thong District, Phitsanulok Province. The instruments were a personal characteristics questionnaire, evaluate knowledge, attitude, and dietary behavior regarding a low-starch diet and intermittent fasting. Data collected between June and September 2023. Statistics used in data analysis include percentage, mean, and standard deviation. Statistics used in hypothesis testing include t-test and One-way ANOVA.The results found that the most of the sample were female(56.70%), age range 17-18 years (60%). Knowledge about food consumption was at a good level (X̅=0.61, S.D.=0.41), and theattitudes about food consumption were at a moderate level (X̅=2.89, S.D.=0.41).The level of food intake behavior needs to be improved (X̅=1.61, S.D.=0.45). The results of the analysis of personal characteristics, body weight and consumption behavior were significantly different, p=.049. Suggestions should be made to correct the attitude and behavior of students with overnutrition.
