Abstract:
The objectives of this study were to 1) study the knowledge food sanitation of food handlers in educational institutions in Samut Sakhon Province, 2) study the perception of food sanitation among food handlers in educational institutions in Samut Sakhon Province, and 3) develop media to raise awareness among food handlers in educational institutions in Samut Sakhon Province about the importance of adhering to food sanitation standards. This study was quantitative research.The sample group consisted of 163 food handlers of food stores in secondary educational institutions in Samut Sakhon Province. There were 91 people of sample size by using purposive sampling method from extra-large, large, and medium-sized schools. The tool used was a questionnaire. Statistics used in data analysis were frequency and percentage.
The result of the study according to the objective 1: knowledge food sanitation of food handlers in educational institutions, Samut Sakhon. The results of the food sanitation knowledge found that 50 food handlers passed the knowledge test criteria (54.95%), and 41 people did not pass the knowledge test criteria, (45.05%).
The results of the study according to objective 2: the perception of food sanitation among food handlers in educational institutions of Samut Sakhon Province found that, 1) Level of perception food sanitation attitudes of food handlers in educational institutions, category 1: food sales places. It is at a good level, except for 1.1) Item 7, provide serving spoons for food that must be eaten together, received (71.43% agreed) and 1.3) Item 2, the area where utensils and equipment are washed. Must have a brightness of at least 300 lux, perceived (89% agreed). While category 2 was about food, cooking process, assembling, cooking, storing, and selling food, is at a good level 2.1) fresh food, dry food, and ready-to- eat food. Item 8: ready-to-consume food waiting to be sold or serviced. Boiled or curry type stored at a
temperature higher than 60 degrees Celsius, (97.80% agreed), 2.3) Ice passes the specified standard criteria, (84.62% agreed). And category 3: category 3 was about hygiene of containers, equipment, and other utensils is at a good level, except for item 11 containers are disinfected. After cleaning, awareness was (97.80% agreed). 2) Level of opinion on food handlers behavior according to food sanitation standards at a good level, except for item 3, having a registration or evidence of having completed food sanitation training from a designated training organization. (60.43% never practiced).
The results of the study according to the objective 3: develop media to promote perception of food sanitation standards values among food handlers in educational institutions, Samut Sakhon Province. From the above research results, the researcher had developed the media in the form of infographic, for promoting perception of food sanitation standards values among food handlers in educational institutions, there was posting it in public relations at food distribution locations of educational institutions.
