Abstract:
This study investigates the potential of nanocellulose-based films incorporated with dill (Anethum graveolens) seed essential oil and gellan gum to inhibit fungal growth in bread for packaging applications with biodegradability. The nanocellulose derived from acid hydrolysis of pineapple peels collected peeling factory in Chiangrai. Thermal, mechanical (tensile strength and elongation at break), morphology and antifungal properties of the films were evaluated, including water vapor permeability and water solubility. The antifungal activity of dill essential oil was tested using disc diffusion assay against Aspergillus niger and revealed the chemical profiles using gas chromatography mass spectrometry. The addition of dill essential oil (2%, 4%) and gellan gum improved the film's mechanical properties in tensile strength. The results suggest that the developed nanocellulose-based films, derived from sustainable sources and containing dill essential oil, have the potential to be used as an eco-friendly and effective bread packaging material for fungal control.
