Abstract:
This research is based on Thailands population problems with a steady increase in cancer rates. Especially liver cancer stomach cancer and colon cancer. Most cancers are caused by the consumption of toasted, grilled, smoked and fried foods with repeated oils that produce carcinogenic substances such as Heterocyclic Amines and Polycyclic Aromatic Hydrocarbon. The second problems that cannot be avoided during the rainy season and the absence of sunlight from the sun will significantly affect the poor quality of the product. Therefore, this research aims to develop biomass dryers with flame thermal conductivity techniques and smoke does not come into direct contact with food through heat exchangers. The drying chamber is designed to have a capacity of 10 kg, as well as creating flame and smoke heat exchangers for heating with conduction, convection and radiation are applied to drying chambers and tree branches are used in common areas as fuel. The products used in the biomass dryer performance test are pork used for processing into sunny pork, with the study factors including the temperature used for drying 55-65 degrees Celsius and the air speed inside the drying room of 1-6 meters per second. The studies showed that increasing drying temperature or wind speed resulted in an increase in drying rates and specific energy consumption. It can also be shown that making sunny pigs can be dried with a biomass dryer at any time of operation, but if it is in the middle of the rainy season, it is necessary to carry out the operation in the roofed area, where biomass drying can be easily moved.
