Abstract:
The objectives of this research were both to study the present state of education provision and to develop education provision model for enhancing professional competencies of graduates in the fields of food and service industry as well as jewelry and ornament industry. The populations and samples from both fields of study were 16 administrators of higher education institutions (deans or chairs of said programs), 62 faculty members, 3 specialists, 4 experts, and 7 employers. Research instruments were questionnaires for instructors and interview forms for administrators, specialists, experts and employers. Research results were: 1. It was found that, for the present state of education provision of both fields of study, outcome-based teaching strategies and learning result standards were focused. Additionally, the learning process was based on researches and developments; while, education provision has been planned in conjunction with labor markets and entrepreneurs. Likewise, the apparent collaboration with entrepreneurs in determining the competencies has also been found. The vocational introduction was promoted by means of the exhibitions and knowledge dissemination for the communities. The cooperation with specialists and entrepreneurs in education provision through field training programs were also found. Qualification standard development was also desired. 2. The development of education provision model to enhance professional competencies of graduates in the shortage fields of study at the level of national policy consisted of visions, missions, achievement goals, competency strategies, objectives, operation strategies and project plans. 3. With respect to professional competencies of graduates in the fields of food and service industry as well as jewelry and ornament industry at institutional level, the graduates expertise and knowledge in the principles of professional conduct were focused. Meanwhile, the instructors and employers co-designed and assessed the curriculum, developed instructional standards, made the assessment based on the practicum, sought the collaboration on research works with entrepreneurs and communities, created professional qualifications towards working overseas as well as enhanced the thinking skill, moral and ethics, professional code of ethics and potential in business and foreign languages.
