Abstract:
The snake fruit seeds were extracted for fatty acids. The optimum extraction method
was 2 grams of ground snake fruit seeds, extraction with 50 mL of dichloromethane:
methanol in the ratio of 2:0.6 and sonication for 15 min. After methylation via esterification
reaction at 80°C for 4 hrs, samples were analyzed by gas chromatography- flame ionization
detector with DB-225 column. Five fatty acids were found. In dry snake fruit seed palmitic
acid (C16:0), stearic acid (C18:0), oleic acid (C18:1n9), linoleic acid (C18:2n6) and α-
linolenic acid (C18:3n3) were 20.52%, 2.19%, 19.42%, 21.31% and 6.48% respectively. In
fresh snake fruit seed were 8.06%, 1.32%, 10.90%, 7.02% and 1.97% respectively. From our
preliminary studied dry Sumalee snake fruit seeds gave the same kinds of fatty acids
compared to Nuenwong snake fruit seeds. Higher percentages of fatty acids were found in
dry Sumalee snake fruit seeds as followed 19.15%, 2.74%, 18.12%, 19.88% and 6.05%
respectively. Whereas, in dry Nuenwong snake fruit seeds fatty acids were 9.96%, 1.52%,
10.97%, 9.10% and 2.44% respectively.
