Abstract:
This research was concerned with characterization of Thai rice using nuclear
magnetic resonance in order to apply and develop science and technology in agribusiness for
international rice trade in the future. Four Thai rice varieties, Hom Mali 105, Suphan buri 90,
RD 31, and Khao A-kat from Sukhothai province, Thailand, were selected and extracted with
cold solvents, hexane, dichloromethane, acetone and methanol, and then dried by a rotary
evaporator. The proton spin-lattice relaxation time (T1) of a nuclear magnetic resonance
technique was analyzed with the use of different polarity extracted solvents. The proton
chemical shifts of crude extracts of most rice varieties were found at 0.87, 1.25, 1.63, 2.01,
2.34, 2.76, 4.16, 4.28 and 5.34 ppm. However, methanol crude extract of Khao A-kat was
found to have an additional chemical shift at 3.23 ppm and only methanol crude extract of
Hom Mali 105 was found to have chemical shift at 3.45 ppm with no signal at 4.16 and 4.28
ppm. The T1 data can be used to differentiate varieties of four Thai rice seeds, specify at
chemical shifts of 1.63, 2.34, 3.23 and 3.45 ppm. It was found that methanol was the
appropriate extracted solvent for an NMR relaxation time study of the four Thai rice varieties
from Sukhothai province.
