Abstract: The color degradation of pineapple juice as affected by thermal treatments at 55-95c wasinvestigated. Hunter L,a and b parameters were used to determine the optical property of the samples during come-up and holding periods. Most of the changes occurred during the first period and no signiicant changes were found for the second period. The color deterioration was more pronounced at high heating temperatures. A decrease in L value and an increase in a value were observed as a result of non-enzymatic browning reactions. Furthermore, the loss of yellowness which represented carotenoid destruction was clearlyseen and expressed by the reduction of b value. The results revealed that temperature was a major factor influencing color degradation rather than the processing time.
