Abstract:
This research is to determine the thermal conductivity of tuna fish abovefreezing temperature by using a modified Fitch method. A disc-shaped sample isplaced in the compartment between a copper disc and a copper rod. Heat is transfc:redfrom a copper disc, which acts as a heat source through the sample and to the copperrod.The apparatus was tested and calibrated by measuring the thermalconductivity of 0.5 percent agar gel and 1.0 percent agar gel. The maximumpercentage difference of measured values and the reference value is 5.4 peroent.Thermal conductivity of 4 species of tuna which are Longtail tuna, Eastern little tuna,Skipjack tuna and Yellowfin tuna as affected by compositions , fat, moisture contentand temperature ranging 10-30 C was studied. Furthermore the effeot of differentmuscle , from head, body and tail of fish to thermal conductivity was investigated,, Itwas found that temperature does not affect the thermal conductivity for the range of10-30 ํC.
