Perishable food sourcing management on island area in Trat province
Abstract:
This research aimed to study the management of perishable food sourcing management on island area in Trat province, which included an examining of factors that affected to hotel food sourcing activities. The data had collected from 10 island hotels in Trat province of Thailand. The data was conducted by taking the in-depth interview and observation. The collected data had been analyzed by the qualitative data analysis and the value chain analysis of Michael E Porter (1985). As the result, it found that the food sourcing management of the entire hotel is similar to each other in both areas as primary and support activities. Moreover, the research found the most important elements that could be grouped into three main factors, which associated to the three support activities in value chain analysis as infrastructure, procurement and human resource management, which had three main factor as financial, operation and management respectively.
