Abstract:
Cereal are important in the world as a whole we get around 90% energy directly or indirectly from cereals. This research aimed to study the antioxidant activity of the six instant cereal beverage, including Mung bean drink, Jobs tears cereal drink, Sweet corn milk, Oat Drink, Rice milk, Soy milk by DPPH Method and ORAC Method. As a result of studying, Jobs tears cereal drink had the highest antioxidant capacity contain the percentage of DPPH radical scavenging at 13.33%, Mung bean drink 12.31%, Rice milk 8.47%, Sweet corn milk 6.31%, Soy milk 5.97% and Oat Drink 4.71% respectively. And a result of studying by ORAC score, Mung bean drink had the highest antioxidant capacity contain of ORAC score at 2,022 (μmoles TE), Soy milk 1,565 (μmoles TE), Oat drink 446 (μmoles TE), Sweet corn milk 398 (μmoles TE), Jobs tears cereal drink 194 (μmoles TE) and Rice milk 128 (μmoles TE) respectively. The statistical analyses are Paired t-test. The result found that the six instant cereal beverage by DPPH significantly association effectively (p<0.01 และp<0.05) And ORAC score association effectively (p<0.01)
