Abstract:
Three experiments in completely randomized design were carried out to study the effect of extraction period on yield of virgin coconut oil. Experiment 1 comprised of 5 treatments with 3 replications. The treatments were coconut cream was separated and fermented at room temperature for 1, 2, 3, 4 and 5 days. Experiment 2 comprised of 5
treatments with 4 replications. Coconut cream was separated, fermented at room temperature for 24 hours follow by 8º C for 2, 4, 6, 8 and 10 days. Experiment 3 comprised of 4 treatments with 4 replications. Coconut cream was separated, fermented at room temperature for 24 hours follow by 8º C 48 hours. Then left at room
temperature for 1, 2, 3 and 4 days. The results showed that virgin coconut oil from each treatment is color less with mild coconut flavour and without contaminants. Virgin coconut oil extracted at room temperature form 4 treatments (2, 3, 4 and 5 days) for 2-5 days were non-significant, average yield of 182.90 - 204.67 cc. Extraction period of 3
days at room temperature was obtained 203.33 cc.
