Mutagenic Potential of Various Chicken Extracts after Nitrosation

Abstract: Commercial chicken extracts (six plain, one fortified with Angelica aeutiloba, one fortified with Lentinus edodeo, one fortified with Panax ginseng, two fortified with Cordyceps ehinensis) and one homeprepared extract were treated with 500 mM sodium nitrite (pH 3.0- 3.5, 37°C) for 4 h. Three nitrite-treated samples converted both Salmonella IyphimuriumTA98 (detecting frameshift type mutation) and TA 100 (detecting base-pair type mutation) of the Ames test to be histidine independent, while nine other samples showed mutagenicity only with TA98. The medicinal plants in the chicken extracts did not show antiformation of mutagens during nitrite treatment. All nitrosated samples contained N-nitroso compounds with no correlation with mutagenicity.
