Mixed vegetables as a source of calcium in rice crisps ‪(Khaotang)‬

MeSH: Calcium
MeSH: Rice
MeSH: Vegetables
Abstract: The majority of Thai people consume less dietary calcium than the recommended value. Inadequate intake for a long time is one of the risk factors in osteoporosis. To increase calcium intake, a calcium source added to foods should be available as an alternative. Some vegetables such as kale are a rich source of available calcium. This study aimed to develop mixed vegetables as a source of calcium in a kind of Thai snack, called khaotang. Three kinds of vegetables, kale, holy basil and Chinese cabbage were chosen for the mixed vegetables. The vegetables were dried before being mixed. Results showed that the optimum dehydration times of kale, holy basil and Chinese cabbage were 5,3 and 8 hrs, respectively. The total calcium and soluble calcium of kale was the highest, and its percentage of soluble calcium to total calcium was 28.58 which was higher than that of holy basil and Chinese cabbage. To select a mixture of vegetables which was rich in calcium and acceptable in taste, four mixed vegetable groups (MV1, MV2, MV3 and MV4) were obtained by varying the proportions of kale, holy basil and Chinese cabbage. The soluble calcium (mg/100g) of MV2 was the highest and the percentage of soluble calcium was 34.81 of the total calcium. Each of the mixed vegetable groups was varied (6, 8, 10 and 12 g) for khaotang ingredients resulting in products having calcium at 10, 15, 20 and 25% of Thai RDI per serving. Sixteen khaotang products from the four mixed vegetables group were evaluated for sensory acceptability. It was found that the product having 15% Thai RDI of calcium per serving, from MV1 [P1(15%)] was most accepted. Concerning chemical composition of P1(15%), it contained more dietary fiber, ash and protein but less fat and energy than the khaotang without mixed vegetable groups. Calcium content of P1(15%) was 94.00 mg per serving size. The percentage of soluble calcium of the product was 20.73. The amount of calcium content of the product per serving equals to 11.75% of Thai RDI. Because of higher calcium content (>10% Thai RDI), the product could be claimed to be fortified calcium products.
