Abstract:
Indian oyster mushroom is an economic mushroom, due to high production, low price, high nutrition value especially, protein contant and has uniform long fiber which is suitable for production of the flavor-shredded Indian oyster mushroom. According to the consumers attitude survey of the flavors-shredded product from Indian oyster mushroom by Focus Group Discussion, it was found that consumers almost wanted the product which was sweet and salt in taste, fine shredded in shape, packed in plastic bag and kept for 3 weeks. The possible formula was selected from the basic formula. Formula and Process development for flavor-shredded Indian oyster mushroom were carried out. It was found that the suitable formulae of the flavor-shredded oyster mushroom was Indian oyster mushroom 2000 gram, sugar 180 gram, peper 10 gram, galic 50 gram, soy sauce 35 gram and water 600 gram. The mushroom was boiled in a mixed ingredients for 30 minute, fine shredded and dried at 55 deg C for 5 hours in a cabinet dryer. After drying the shredded mushroom was deep fried at 170 deg C for 15 seconds. The flavor-shredded oyster mushroom product obtained has colour values (L*, a* and b*) 30.7, 7.0 and 8.5. The Water Activity, moisture, protein, fat, ash and fiber contants are 0.34, 4.58 percent, 10.5 percent, 12.43 percent, 2.58 percent and 4.56 percent respectively. The product can be stored for more than 5 weeks at room temperature in the Oriented Polypropylene (OPP) bag with nitrogen gas packed. The product was found accepted by consumers with moderately overall liking score.
