Monitoring characteristics of dried banana slices using image processing
Abstract:
The principle of dried fruit is to reduce the water content inside the fruit until it is appropriate. The purpose of dried fruit is to preserve food. Many studies on dried fruit play an important role in improving control systems by controlling drying parameters such as temperature, drying period, air drying velocity, etc. All parameters will affect dried fruit, including color, shrinkage, and moisture ratio. This research focuses on finding the relationship between color change and the drying time process. The result in Lab* color space shows the most influential change is in L*, and the mathematical model of color difference (ΔE*) is equal to -1.1292L* + 19.9591. At the appropriate condition of dried banana slices, the brown index (BI) should be 11.93.
