Synthesis and development of Graphene Oxide for electrochemical determination of Capsaicin
Abstract:
Food is one of the factors for living. Variety of food flavors depends on raw materials and culture of each country. Chili is a raw material that has been widely used for cooking around the world. Capsaicin is an organic substance that causes spiciness and pungency in chili. Electrochemical is a technique that has been used for detection of food chemicals concentration. The modification of electrode surface is a developing of electrochemical determination of capsaicin. Graphene oxide is a unique modified substance because of it can conduct electricity, adsorption and large surface area. Tin is a cheap metal which has been used as catalyst. For this purpose, the surface of electrode was modified by Sn/rGO for electrochemical determination of capsaicin. Sn/rGO was synthesized by electrochemical deposition and chemical reduction. In this work, the morphology of modified electrode surface was characterized by scanning electron microscopy and transmission electron microscopy. The elemental composition of Sn/rGO was analyzed by energy dispersive x-ray spectroscopy and x-ray photoelectron spectrometry. The cyclic voltammetry and chronoamperometry were used to study the performance of modified electrodes and catalytic activity to redox activity of capsaicin. The effects of electrochemical determination of capsaicin depends on amount of Sn, volume of Sn/rGO, scan rate, pH of electrolyte solution and accumulation time. Under the optimize conditions, the capsaicin was found at low concentration in the micromolar unit. The modified electrodes were used to detect capsaicin in Karen chili and Birds eye chili.
