Abstract:
This research was a qualitative research by studied and collected data
about the South local food management for life quality and social ethics
development in the South community of Thailand. The objective of this research
were 1) to study body of knowledge and value of food towards health promoting of
the South community of Thailand, 2) to study the process of food management in
life quality promoting and social ethnic of the South community of Thailand and 3)
to analysis the effect and relation of the South local food towards the South
community of Thailand. The collect data from the informant in the process of food
management in life quality promoting and social ethnic of the South community of
Thailand consisted monk, local wisdom, nutritionist, local culture, local personal,
entrepreneur and the South local food producer in Nakornsrithammaraj Province and
Songkhla Province by using demonstration, interview, seminar and joining activity
about food management both Nakornsrithammaraj Province and Songkhla Province.
It used collect data about 60 days and there were 24 persons of informants in this
research.
The researches were showed as following;
1. The body of knowledge and value of food towards health promoting of
the South community of Thailand found that the South local food from the studying
come from the creation of local wisdom and food resource perfectly in the South
emphasized the value of the material resource and the good to health promotion of
the South community of Thailand.
2. The process of food management in life quality promoting and social
ethnic of the South community of Thailand found that the process of food
management of the South concerned life quality promoting and social ethnic very
much that each kind had food value cover 5 groups. The component parts of
cooking had vegetable and herb that had nutritious food and medical property.
It was food for life quality development towards health promoting, learning,
pump knowledge and preserving value. It was wisdom that had reflected the way of
eating of the South people of Thailand in the holding "eat for be medicine, not for
be food". In term of process of food management of the South community had
promoted social ethnic in several levels as family, community and society. There was
started the food management and eating together of family, idea making and self-
practice together of the South people. Moreover, the process of foods management
had more value to promote the ethnic and cultural and traditional inherit in the
South community as Jujun dessert that offered the monk and build the fire to the
warm monk. It had also tom dessert that made in the month of October and La
dessert and dessert others namely Ba dessert, deesome dessert, Kong dessert or
Khaipla dessert and Pong dessert that made in the month of 10 (September) in the
Sard Dieansip Tradition of the South.
3. The effect and relation of the South local food towards the South
community of Thailand found that the life style and occupational change of people
in community had effected to relate and affect towards the South local food very
much especially the food management in the family level had lack of knowledge
inherit that was not realized nutrition value. It had been problem to healthy, life
quality development of community and also had made some the South local food
disappears.
