Proximate composition and antioxidant activity of Hang Rice and Hang Rice Milk from local upland rice cultivars in Ratchaburi Province, Thailand
Abstract:
Hang rice is product from local knowledge of Thailand. The rice process consists of soaking,
germination, steaming, drying and dehusking. Therefore, rice is a high nutritional value rice product, and rice
products can add value to local crops as well. The objective of this research was to determine the proximate
composition and antioxidant activities of Hang rice and Hang rice milk. Three rice cultivars in Ban Kha
district, Ratchaburi namely Khao Luang, Khao Dang, and Nong Pa Nia were used in this study. The moisture
was 9.53-10.05 % dry weight for Hang rice and 91.41-92.10 % wet weight for Hang rice milk. The
determination of antioxidant activity by DPPH assay was in the range of 22.84-28.84 ugTEAC/g dry weight
for Hang rice and 12.62-27.85 ugTEAC/g fresh weight. Khao Dang had the most potent activity. The total
phenolic contents in sample varieties using Folin-Ciocalteu method were significantly different (p<0.05) in
the range of 18.85-38.23 ug GAE/g sample for germinated parboiled rice, the highest phenolic content was
found in Nong Pa Nia. The Hang rice milk was in the range of 1.40-6.45 ug GAE/g sample, and the highest
phenolic content was found in Khao Dang. The results showed that the antioxidant activity of Hang rice
products decreased due to the influence of heat from the production process.
