Abstract: The objectives of this study were to determine the effect of culture age and different cryoprotectants on the viability of Lactobacillus paracasei AN3 after the freeze-drying process and to evaluate its biocontrol efficiency against growth and aflatoxin B1 production of Aspergillus flavus. The highest percentage of survival cells (120.04 + 2.73 percent) was obtained after freeze-drying, when skim milk (10 percent,w/v) was used as a cryoprotectant. It provided high cell viability until three months of storage at ambient temperature. The culture age did not have a significant effect on survival cells. For evaluation of antagonistic activities, all freeze-dried cells of L. paracasei AN3 could maintain the ability to inhibit the growth and reduce the AFB1 production of A. flavus.
