Abstract:
Formaldehyde is a toxic chemical commonly used in many industries. Food
manufacturers sometimes add formaldehyde solution namely formalin to food to extend its
shelf-life. In this article, a digital image colorimetry (DIC) was developed for a rapid
quantification of formaldehyde in food. This made a quantification being achieved by using
only mobile phone instead of an expensive spectrophotometer. DIC provided wide linear
range (1−50 mg/L), low detection limit (0.68±0.02 mg/L), good accuracy (+4.1% relative
error), and good inter-day precision (1.30−4.37%RSD, n=3). These results indicated that DIC
has a potential to be used as a cost effective formaldehyde detection. The developed method
was applied for determination of formaldehyde in foods from supermarkets in Phuket and it
was found that various foods contained formaldehyde at higher concentration than their
natural occurrence (e.g. 245±8 mg/kg in octopus tentacle).
