Supply chain management systems of perishable goods for canteen business : a case study of Alma restaurant
Abstract:
This paper examines the way to reduce the wastage of perishable goods at the
lowest cost and maximize expected profit in the supply chain for Alma restaurant. The
data was collected using an in-depth interview and observation of the central
warehouse for Alma restaurant. The study was analyzed by using demand forecast to
predict what will happen to customer demand in the future. The finding indicated that
the success of Alma in supplying the demand in the most efficient and profitable way
will then depend on the accuracy of the forecasting process in predicting the future
demand. Moreover, the demand forecasting process can be a help for Alma restaurant.
Especially if it is incorporated into a function planner for various operations such as
supply and demand planning, decisions on desired safety stock levels, and performing
available to promise planning. The latest techniques like refrigerated warehouses,
vacuum processing and information technology interfaces for operations are also
stated in this paper.
